Interview with the Bravissimo Cake Designer Davide Minetti, winner of two editions of Cake Design Italian Festival in Milan and gold medal at the prestigious Birmingham Cake International.

Today I have the great honor to present an exceptional Cake Designer: Davide Minetti. Those who constantly follow the world of cake design, social groups dedicated to this beautiful art or participated in the past editions of Cake Design Italian Festival (CDIF) in Milan knows that Davide Minetti is a very good, young and very promising Cake Designer. Today you will know something more about David and your life as a cake designer.

1 // Hi Davide, tell us something about you, how and when your passion for cake design was born?


Hi Terezie, I approached the world of cake design almost by chance about 5 years ago; I was struck by a TV broadcast where I saw these fantastic decorations on cake and great greedy and great creative and manual arts passionate I said to myself: why not try it? And then I started to document and read to understand that materials use, the techniques to create the decorations in sugar paste ... from the first attempt to cake made for the baptism of my nephew I switched to creating more and more elaborate and complex cakes as decorations, attending even in the meantime Modeling courses, which is what I like to do more in the Cake Design.

The somewhat unusual thing is my job, I do the dentist and those who come aware of my passion for desserts and the pastry shop always remains a little displaced and intrigued by this figure of the dentist-pastry chef ... from here the name of my page is also the name of my page. I have a nice family, a 3-year-old child and a child coming and is for them that I leave free space to my imagination and that I create my most "inspired" cakes and sugar characters. 


Congratulations, you're right that dentist pairing - Pastry chef / Cake Designer is a bit particular.
I imagine how many questions and how much curiosity comes from this combination of work - passion.


2 // You are a cake designer of great skill and talent. But before talking about your favorite part of Cake Design I wanted to know which is your approach to the pastry shop. Do you have any favorite cakes, creams or fillings?


I am for the American cake in appearance (so high cake and covered in sugar paste), but Italian in taste. My favorite base remains the classic sponge cake stuffed with various creams. My favorite lately is the filling with Bavarian cream in coupled with a layer of fruit gelée ... very good and the slice is perfect for cut as aesthetics and consistency ... decidedly approved.


Absolutely, I believe that combination of the American cake in the appearance and the goodness of Italian bases and creams is always winning. Now let's go back to the Cake Design
 


3 // Do you tell us how your cake decorated from the decorative design phase up to the final result? Are you inspired by someone or do you just want to work for your imagination?


Most of the time (fortunately) I complete white paper on the projects so I like to give total vent to fantasy even with regard to the structure of the cake. If I have to inspire myself to a particular theme I do network research on images on the theme to have a more thorough idea even colors to use ... one of the things I like best is to have a harmonious colors between them; The project of the base structure of the cake starting from the dimensions and from the part that will be Dummy or Vera cake is already very clear in mind from the beginning while as regards the decorations and their arrangement I make a more definitive idea during the work, as the various pieces of the "puzzle" They fight together.


In fact your cakes struck me as well as for their beauty and perfection of execution also for the harmony of colors. You have a truly exceptional aesthetic taste.


4 // Have you ever participated in important cake design competitions? Can you tell us how it went?


Yes, I've always liked to test me in the competitions ... I participated for two consecutive years at the Cake Design Italian Festival contests in Milan; In 2014 I won the first prize in the Modeling category and in 2015 I won the first prize in the sculpture category and addressed the CDIF Competition's live race winning the first place and the taste award.
In 2016 I participated with the cake dedicated to the four seasons of Vivaldi at Cake International in Birmingham ... I didn't believe it when I saw that I got the Gold Award in the International category.


I'll do my complexions for these fantastic results.


5 // Seen your skill Have you ever thought about holding decoration and modeling courses?


I confess to have thought about it but for the moment with my work and the family time always scares ... but never say ever!


6 // Would you like to share with us and tell us your first cake with sugar paste?


My first cake with sugar paste was obviously a crap ... you couldn't watch ... Ready to decorations in purple Florellini ... a nightmare !!! I had made it for a dinner with friends ... Under torture I could provide the photo !!


Don't pray! :) We are pleased if you also share the first job, especially if it was not up to the most recent cakes, because so you can show other cake design fans, that with passion, commitment and practice can be improved.

7. If you like you would share your 5 creations with us you are most fond of?

It is the cake with which I won category Modeling at the CDIF of 2014 in Milan, although the modeling was still raw enough; I am fond of them in a particular way because it is linked to a particular moment of my life.

With this I ranked the finalists of the CDIF (Cake Design Italian Festival) competition that took place in Milan - I love it for the atmosphere and colors ... I think it's very suggestive.

This is the cake that made me win the final of the CDIF (Cake Design Italian Festival) Competition in Milan ... is dedicated to my two loves of life: my wife will be my baby Stefano.

With this creation I always won in 2015 in the category Sculpture at the CDIF ... I love this princess of the seas and represents a challenge that I imposed me, the first complex sculpture in sugar paste.

And finally she represents the four seasons of Vivaldi and my participation in the most important contest, the Cake International of Birmingham ... a set of indescribable emotions have accompanied the journey with my cake, an unforgettable experience.

Really many compliments, you made the way from the first time you used sugar paste. I find your creations of a unique beauty and refinement.


8 // Are there cake design tools without which you could not do without?


My fundamental tools are the fingers mainly, but I would say that my "irreplaceable" are the Dresden Tool and the silicone brushes.


9 // How do you see your future of Cake Designer?


In my future I see lots of cakes made for my children and I assume that this will always remain a fantastic hobby for me ... I see several projects on the horizon even within the Sugar Artist League ... we are a beautiful group of friends too we will combine of the beautiful.
